MANGO GINGER SPICE KITS 

There’s not many kits on the market that will allow you to replicate authentic Indian Dishes in your own home like Mango Ginger kits.

Most Indian Spice kits are either pastes in a jar or 1 packet of spices. Our kits are different as spices are divided into 4 – 5 sachets and require to be added at certain stages of cooking, just like I do. Our Kits contain whole spices, including  whole spices freshly ground using a pestle and mortar & individually packed by myself. All the hard work of choosing which spices to use and the quantities have already been taken care of, straight from my Spice Tin.  All dishes have been tried, tested and made to a standard many takeaways, ready meals or some restaurants will struggle to match.  These spices have a lovely warming aroma, a testament itself of the freshness.

Indian cooking is all about getting timings and oil temperature right before adding spices, each spice has different burning points and require the cooking oil to be heated at correct temperature and varying cooking times otherwise certain spices can burn easily and not taste right .  This is how you layer up your spices, they’re not meant to be added at the same time. You can also control the heat of each dish to your taste.   The hot chilli spice is in a sachet of its own, so you can control the heat levels of your dish to your preference from mild to hot.

Some Kits on the market allow you to cook seafood/chicken/lamb/ pork/beef dishes from 1 kit.  Mango Ginger Spice Kits are put together to be used for a specific dish.  For example, I wouldn’t advise you to use a Lamb Rogan Josh kit to cook chicken/seafood.  Likewise, a coastal prawn Kit is specifically packaged for seafood.  This is how a typical Indian family cooks in their homes.  We don’t use generic spices for vegetarian, seafood or any meats, they are all unique to each dish and they all have different cooking instructions.  This is why these kits are the closest you will get to cooking authentic Indian cuisine.

Each kit includes fool proof instructions. I include as much information as I can, so you simply can’t go wrong.  

The kits are so easy to use and have a shelf life of up to 6 months.

The lamb is cooked using the Bhuna process where  its initially cooked with stir fried spices for a prolong period with little water.  This will heighten and  intensify the flavours to a different level. The lamb is  slow cooked, succulent and melts in your mouth, never chewy or tough.  The heat can be varied in this dish and does not need to be fiery hot.by adding a few spoons of yogurt, lessens the chilli heat.   All spices can be enjoyed when the heat is kept subtle.

A dash of cream or coconut cream & almond powder transforms this tomato based sauce into a creamy rich delight. Chicken breasts are marinaded with curd flavoured with the aromatic spice cardamom, authentic cumin & coriander spices.  The marinaded chicken is partially cooked under the grill before infusing into the creamy sauce. This dish is a family favourite.  Subtle aromatic flavours makes this dish irresistable.

This dish is a Saturday night staple in most Indian households. No knives and forks necessary.  Get stuck in with chappatis and rice and eat with your fingers, trust me, its a more fulfilling experience.  The bhuna process is used here to intensify all spice flavours. The sauce is a thicker consistency smothered over the chicken pieces with boiled eggs thrown in.
